Mooving into town: Tipsy Cow Burger Bar plans for November opening in Redmond

Those are the slogans that Tipsy Cow Burger Bar owners are rolling with as they plan for an early November opening in Redmond. Dave Zimmerman and Keith Mourer, who own the upscale casual Brix Wine Cafe in Kirkland, will soon set up shop at 16345 Cleveland St. in the Elan luxury apartment building, which is still under construction.

According to Brix/Tipsy Cow general manager Natalie St. Aubin, the new spot will also be upscale casual and feature burgers with local and organic ingredients. They will grind their own “secret” blend of beef daily in their refrigerated grinding room. The chef-designed burgers will run from $8-$12 and there may be an Ahi tuna burger on the menu, as well. Buns from Seattle’s Macrina Bakery will cushion the burgers together.

Tipsy Cow will also feature 20 microbrews on tap and hand-dipped shakes, with alcohol and without the hard stuff.

One of the Brix servers came up with the Tipsy Cow moniker, but there’s no interesting or humorous story behind the name, St. Aubin said.

Inspired by a burger bar in Austin, Texas, a few of the Tipsy Cow folks went on a road trip to that city for a study session.

“It was a 24-hour jaunt and we ate a lot of burgers. It was pretty fun,” St. Aubin said.

To introduce themselves to Redmond, Tipsy Cow representatives will share a table with the Elan building officials at this weekend’s Derby Days celebration.
