Nacho Mama’s puts twist on a classic

It’s hard to miss the bright yellow and orange food truck that winds up in front of Black Raven Brewing every Wednesday afternoon.

The truck belongs to Chris and Sandra Curtiss, who started Nacho Mama’s last year after 23 years in the restaurant industry working at Frankie’s Pizza in Redmond before it closed last October.

“We really wanted to stay in the food industry, but wanted to do something a little simpler,” Chris Curtiss said.

Their first day was on last November’s election night in Ballard, and Sandra Curtiss said it was hands down their busiest night they’ve had yet.

Last Wednesday, the couple was busy preparing their truck to open at 4 p.m. and serve up unique takes on nachos.

This week’s menu was inspired by the Harvest of Hatch Chiles Festival in New Mexico, with a regular menu returning next week.

Some unique offerings included a Cajun nacho, a pork belly and pineapple nacho, a street corn nacho and a few more options.

The couple said they make everything from scratch, and that almost everything other than some desserts are also gluten free.

“(We) try and use as much as, as many organic ingredients as possible,” Chris Curtiss said.

When they decided to start the food truck, they wanted to focus on something that paired well with beer.

Eventually, they settled on nachos after noticing a niche for the food.

It also didn’t hurt that it was what they ordered on their first date.

“We just always loved nachos,” Chris Curtiss said. “…We’re just having so much fun doing this.”

Sandra Curtiss also said that even though they may not see as many of their old regulars from Frankie’s, there’s still a good amount of familiar faces coming through their truck.

“This allows us to see a lot of our old customers,” she said.

The couple decided to focus on catering to the craft brew scene, and can also be found at Postdoc Brewing, The Hop and the Hound in Bothell, Chainline in Kirkland and they’ll be catering a night at Cairn Brewing in Kenmore soon too.
