The Flying Apron located in Redmond Square at 16541 Redmond Way, Suite E in Redmond, will have its grand opening on July 18.

The celebration for the new gluten-free, vegan bakery will start at noon and continue until 7 p.m. There will be free samples of Flying Apron products all day. Owners Erik Chelstad, Ethan Hernandez and Jeff Silva will also be on hand day to answer questions.

The Flying Apron creates products using gluten-free, vegan, and organic ingredients in a completely wheat-free, gluten-free and vegan kitchen, which sets it apart from bakeries with gluten-free options coming from a mixed-use environment. Many of the products can be or are alternatively sweetened utilizing ingredients such as agave, maple syrup or stevia. In the café, all of the ingredients are listed next to the products so customers can choose the products that are right for them.

The Flying Apron also does wholesale business in Washington, delivering to grocery stores such as Whole Foods, PCC, Thriftway, and Central Coop and also coffee shops and cafés such as Fiore, Issaquah Coffee Company and Hotwire.

The Flying Apron encourages business decisions to promote a healthy economic environment with their Local Producers Program. The program promotes cooperation, knowledge sharing and community building within the physical area and market space of the Flying Apron with the belief that working with companies in an environment of shared values creates truly sustainable positive growth for all parties.
